A utility like this or a clean no MDM iPhone backup, iCloud or local will take care of the problem The iPhone 8 's i got from a local biz after they upgraded were all erased but they never removed them from MDM enrollment, so when trying to set them up, the MDM config would be sent by apple and then required login credentials to complete setup. just shout auto updates off until its been tested as safe.
As for iOS 16, I don't know if anything will change. Now continue setting up the phone on the handset or computer, restore that backup YOU made ) no MDM and you didn't need to use the utility tool again ) Yes you can take updates, I have a lot of iPhone 8, some on iOS 11.xx and 12.xx and 13.xx I let a few of them update to current 15.5 via ota on the phone itself. See at that point no MDM has been installed, remember the clean erased phone. The thing is, you first must erase the phone, don't set it up, then use a computer that has iTunes, once iTunes welcomes you to your new iPhone, stop there, now use the utility. Then to test this, go into settings and restore erase all. I suggest log into your iCloud account and make one iCloud backup. It simply restores a blank patched backup.
